Organic Pastures Dairy Company (OPDC) is rooted in the innovative farming and dairy endeavors of the McAfee grandparents. Since the 1950s, McAfee Farms have been leading advocates of nature-friendly farm practices. In 1988, the family established an organic farm and by 2000, Organic Pastures Dairy Company became California's first raw milk dairy with certified organic pasture land. The dairy is located near Fresno, California, in the heart of the fertile San Joaquin Valley, and is one of the few remaining family-owned and operated dairies in California.
Azure Standard and the McAfee family have had a relationship since 2005. Azure had interest in carrying raw dairy products, so Mark McAfee visited David Stelzer, now Azure CEO, at the Azure headquarters in Dufur, Oregon. They both quickly realized it was going to be a fruitful relationship. In 2009, the FDA passed a resolution that prohibited interstate sale of raw milk. Since then, Azure Standard has continued to be a great partner in buying truly raw almonds that McAfee Farms grows in Fresno, CA. Recently, the relationship took another step forward with Azure beginning to distribute OPDC’s farmstead cheese, Truly Raw Cheddar.
OPDC’s Raw Cheddar Cheese is North America's first truly raw pasture fed cheddar cheese. Unlike most other raw cheeses, Truly Raw is never heated above 105 degrees (Fahrenheit) during the cheese making procedure.
Many so called “raw” cheeses are actually heated to temperatures just under legal pasteurized temperatures of 161 degrees, denaturing enzymes and killing beneficial bacteria. It is done primarily to offset the poor quality of milk used to make raw cheese in the conventional market and to increase the activity of the cultures that are added. The cheddar cheese is aged a minimum of 60 days.
